Belgian Waffles

Mark and I both came from families with a prized waffle recipe, but we found this one to beat them both. It came from a Better Homes & Gardens cookbook we received as a wedding gift. We've made this recipe at least once a month our entire marriage. -Jenae (Originally shared in the University Ward Cookbook.)
Ingredients
- 1 3/8 cups all-purpose flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 2 egg yolks
- 1 3/8 cups milk
- 1/2 cup cooking oil (or substitute w/ apple sauce)
- 2 egg whites
Instructions
- In a mixing bowl combine flour, baking powder, and salt.
- In another bowl beat egg yolks slightly.
- Beat in milk and oil.
- Add egg yolk mixture to flour mixture all at once.
- Stir just till combined but still slightly lumpy.
- In a small bowl beat egg whites till stiff peaks form (tips stand straight).
- Gently fold beaten egg whites into flour and egg yolk mixture, leaving a few fluffs of egg white. Do not overmix.
- Pour 1 cup of batter onto preheated, lightly greased Belgian waffle iron.
- Close lid quickly; do not open during baking.
- When done, use a fork to lift waffle off grid.
- Makes 3 or 4 waffles.
