Blackberry Bread

I’ve found that frozen berries work just as well as fresh in this particular recipe. (Originally shared in the University Ward Cookbook.)
Ingredients
- 3 large eggs
- 2 cup granulated sugar
- 1 tsp. vanilla
- 1 tsp. salt
- 1 1/2 tsp. cardamom
- 1 tsp. cinnamon
- 1 cup vegetable oil
- 2 cups fresh or frozen blackberries (or raspberries)
- 3 cups flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, beat eggs until light and fluffy.
- Stir in oil, sugar, blackberries, and vanilla.
- Mix lightly, but well.
- Combine and sift dry ingredients, then stir into basic mixture.
- Pour batter into lightly greased and floured loaf pans (x2) or single 9”x13”x2” pan.
- Bake for 60 minutes (or until toothpick comes out clean)
- Let cool in pan 10 minutes, then turn out onto cooling rack.
